Beefy Baked Potatoes

Directions

Preheat oven to 200°C.

Place potatoes in a pot with plenty of water.  Bring to the boil and cook for 15 to 20 minutes until just tender, but not overcooked.

Meanwhile heat oil in a frypan over medium heat. Add onion and carrot and cook for 5 minutes or until the onion has softened. Add mince and garlic and cook until the mince has browned.  Add soup and cumin, stir until evenly mixed. Cook for 5 minutes, stirring occasionally.

Whilst the mince is cooking, cut the cooked potatoes in half lengthways, trim a little from the base if they don't sit flat. Spoon mince onto the potatoes then transfer to a baking dish. Sprinkle with cheese. Bake for 15 minutes or until hot and cheese has melted. Serve with sour cream and a fresh green salad.

1 tbsp oil
1 onion, finely chopped
1 carrot, finely chopped
400g beef mince
2 cloves garlic, crushed
1 x 420g can Campbell's Tomato Condensed Soup
1 tsp ground cumin
3/4 cup grated tasty cheese
Sour cream, to serve
