Chicken chow mein

Ingredients

  • 1 tbs oil
  • 1 onion, thinly sliced
  • 1 clove garlic, crushed
  • 500g chicken mince
  • 600g Chinese cabbage, thinly sliced
  • 1 tbs oyster sauce
  • 1 x 400g can Campbell’s Chicken Noodle Condensed Soup
  • 1 tbs soy sauce
  • 2 tsp corn flour mixed with 1 tbs water
  • ¼ cup slivered almonds, toasted
  • Rice, coriander & spring onions to serve

Method

  1. Heat oil in medium sized fry pan, cook onion for 3 mins or until soft. Add garlic & cook for 1 min. Add chicken mince & cook for 8- 10 mins until browned.
  2. Add Chinese cabbage & cook for 5 mins, stir regularly.
  3. Add Campbell’s Soup, oyster sauce, soy sauce & corn flour mixture. Return to simmer. Cook for a further 5 mins. Stir through almonds.
  4. Serve with rice, coriander & spring onions.
