Hearty Beef Minestrone

Directions

Combine mince and garlic and roll into small balls.

Heat oil in a saucepan over medium-high heat. Cook meatballs until browned on all sides. Add garlic and bacon, and cook for 1 minute.

Add stock and bring to the boil. Stir in tomato paste, celery, carrots and potatoes. Cook for 5 minutes.

Add zucchini and pasta. Cook for 10 minutes or until pasta is just cooked.

Stir in borlotti beans and cook until heated through.

1 Litre pack Campbell's Real Stock - Salt Reduced Beef
2 sticks celery, diced
2 carrots, diced
2 potatoes, diced
2 zucchinis, diced
1 cup small shell pasta
400g borlotti beans, rinsed and drained
