Chicken puttanesca

Ingredients

  • 1 tbs oil
  • 1 brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 500 g chicken thigh fillets, thinly sliced
  • 2 tbs pitted kalamata olives
  • 1  x 420 g can Campbell’s Condensed Minestrone Soup
  • 1 x 400 g can diced tomatoes
  • ½ cup basil leaves, finely chopped
  • Pasta & parmesan cheese to serve

Method

  1. Heat oil in non-stick fry pan over medium heat. Add onion & garlic, cook for 2 mins.
  2. Add chicken & cook for 10 mins or until browned. Add olives, Campbell’s Soup & tomatoes. Cook a further 10 mins. Stir through basil.
  3. Serve with your favourite pasta & parmesan cheese.
