Corn, split pea & ham fritters

  • 1 x 420g can Campbell's Condensed Spilt Pea & Ham Soup
    210g can sweet corn kernels, drained
    2 green spring onions, finely chopped
  • 2 eggs, beaten
    1 cup self raising flour, sieved
    3 tbsp oil
    tomato chutney, to serve


  1. Combine the soup, sweet corn kernels and spring onions. Add the eggs and mix in the flour. 
  2. Divide into 8 portions and roll into patties. 
  3. Heat the oil in a frying pan, preferably non stick, over a low to medium heat and cook the patties on both sides until golden. 
  4. Serve with tomato chutney and a fresh garden salad.
