Butter Chicken

Method

  • Preheat oven to 220°C.
  • Combine the tandoori paste, yoghurt and garlic in a bowl. Add the chicken and coat thoroughly then marinate for 10 minutes or overnight if time permits.
  • Transfer the chicken and marinade to a baking dish and bake at 220°C for 20 minutes until cooked through.
  • Meanwhile heat the butter in a large saucepan over medium heat Add the spices and cook for 1 minute. Add the soup and cream and continue cooking until the chicken is baked has cooked.
  • Transfer the chicken and any juices to the sauce and simmer for 10 minutes. Serve with steamed basmati rice and vegetables.

2 tbsp tandoori paste
1 cup low fat thick style yoghurt
2 cloves garlic, crushed
8 chicken thigh fillets, trimmed
1 tbsp butter
1 tsp ground paprika
2 tsp garam masala
1 x 420g can Campbell's Condensed Tomato Soup
1 cup reduced fat cream
