Chicken Pot Pies

Method

  • Preheat oven to 190°C.
  • Lay the potatoes in six individual ramekins or one large ovenproof dish. Arrange the chicken, peas, corn, carrot, onion and herbs on top.
  • Spoon the soup evenly over the other ingredients.
  • Cut the pastry to fit the dishes and lay over the pies, press down edges to seal. Bake for 20 minutes or until the filling has heated through and the pastry is golden.

Ingredients

2 potatoes, sliced and cooked (either microwave or boiled)
2 - 3 cups diced cooked chicken, either grilled, leftover or barbecue chicken
1/3 cup peas, either fresh or frozen
1/3 cup corn kernels, either fresh, frozen or canned
1 carrot, diced
1 onion, chopped
1 tbsp chopped parsley
1 tbsp chopped chives
1 can Campbell's Condensed Cream of Chicken Soup
1 1/2 sheets puff pastry, defrosted
