Date & Pistachio Couscous Salad

Method

  • Bring stock to the boil over high heat. Place couscous in a large heatproof bowl. Pour boiling stock over while stirring with a fork. Cover and stand for 5 minutes or until all the stock is absorbed. Use a fork to separate the grains then set aside to cool down.
  • Add dates, pistachio nuts, parsley, coriander, green spring onions and tomatoes. 
  • Place oil, lemon rind and juice, and salt and pepper in a screw-top jar, shake well to combine. Pour over couscous salad and toss gently to combine.

500ml Campbell's Real Stock- Vegetable
1 x 500g pack couscous
1 cup dates, chopped
1 cup pistachio kermels, roughly chopped
1/2 cup fresh continental parsley leaves, chopped                          
1 bunch fresh mint leaves, chopped
1 bunch fresh coriander leaves, chopped
4 green spring onions, finely chopped
1 x 250g punnet cherry tomatoes, halved
3 tbsp oil
2 lemons, rind grated and juiced
salt & pepper, to taste

Moist & Savoury Stuffing

Use Campbell's Real Stock instead of water when preparing your favourite stuffing mixture. Substitute and even amount of Campbell's Real Stock for water.
