Asian Chicken with Peanuts

Method

  • Stir the cornflour, stock, soy and ginger in a medium bowl. Set aside.
  • Heat 1 tablespoon oil in a wok or large frying pan over medium-high heat. Add the chicken in batches and stir-fry until it’s browned. Remove the chicken and set aside. 
  • Reduce the heat to medium and add the remaining oil. Add the broccoli, capsicum and garlic. Stir-fry until the vegetables are just tender.

Ingredients

2 tablespoons cornflour
1 x 375ml pack Campbell’s Real Stock - Chicken
2 tablespoons soy sauce
2 teaspoons freshly grated ginger
2 tablespoons oil
500g chicken breast stir fry strips
1 head broccoli flowerets
1 large red capsicum, cut into thin strips (about 2 cups)
2 cloves garlic, crushed
1/2 cups salted roasted peanuts or roasted cashews
