Asparagus Cannelloni

Method

  • Preheat oven to 180°C.
  • Combine the salami, bacon, onion, asparagus, soup, cheese and sour cream and spoon into the cannelloni tubes.
  • Arrange the tubes in a large baking dish in a single layer.
  • Make the sauce by melting the butter in a saucepan then add the flour and cook for 1 minute. Gradually add the milk, then bring to the boil, stirring constantly, until thickened.
  • Pour the sauce over the cannelloni tubes then top with cheese. Bake for 40 minutes or until the pasta is soft and the filling hot.

200g finely diced salami 200g finely diced rindless bacon 1 onion, grated 340g can asparagus spears, drained and chopped 1 can Campbell's Condensed Cream of Chicken & Corn Soup 1/2 cup grated mozzarella cheese 1/2 cup light sour cream 1 packet dried cannelloni pasta tubes Sauce 1/4 cup butter or margarine 3 tbsp plain flour 3 cups low fat milk 1 - 2 cups grated cheese
