Baked Sausage & Rice

Method

  • Preheat oven to 180°C.
  • Heat oil in a large frying pan over high heat. Cook sausages for 5 minutes or until browned on all sides. Remove and place into a 8 cup (2 ½ litre) ovenproof casserole dish.
  • Add onion, garlic and bacon to the frying pan and cook for 2 – 3 minutes until softened. Add stock and bring to the boil, stirring. Pour mixture over sausages. Stir in rice. Cover and bake for 40 minutes or until rice is tender and stock has been absorbed.
  • Remove from oven, stir in peas, cover and set aside for 5 minutes. Serve with grated tasty cheese, if desired.

1 tbsp oil
300g beef chipolata sausages
1 onion, finely sliced
2 cloves garlic, chopped
2 rashers bacon, diced
1 x 1 litre Campbell’s Real Stock - Salt Reduced Beef
2 cups long grain rice
1 cup frozen peas, thawed
grated tasty cheese, to serve
