One Pot Chicken, Pumpkin & Spinach Risotto

Method

  • Heat oil in a large saucepan. Add chicken and cook until golden brown. Remove from pan.
  • Add onion and cook for 5 minutes. Add rice, garlic and pumpkin and cook for 1 minute. 
  • Pour in Campbell"s Real Stock and bring to the boil, stirring occasionally.  Cover, reduce heat to low and simmer for 20 minutes, stirring occasionally, or until rice is just cooked through.
  • Remove from the heat, stir in chicken, spinach and parmesan cheese. Cover and let stand for 5 minutes to allow the chicken to heat through. Serve immediately with extra parmesan cheese, if desired.

Ingredients

1 tablespoon oil
500g diced chicken breast
1 onion, finely chopped
1 1/2 cups arborio rice
2 cloves garlic, crushed
1kg butternut pumpkin, peeled, cut into 2cm cubes
1 x 1 litre pack Campbell's Real Stock - Vegetable
150g baby spinach leaves
1/2 cup grated parmesan cheese
extra parmesan cheese, to serve
