Hokkein noodle, chicken and snow pea soup

Ingredients

  • 225g fresh hokkein noodles
  • 1 tbs oil
  • 400g chicken thigh fillets, trimmed, thinly sliced
  • 1 L Campbell’s Real Soup Base - Thai
  •  1 red capsicum, diced
  • 100g snow peas, trimmed, sliced

Method

  1. Soak noodles in a bowl of boiling water for 2 minutes until softened. Drain and separate with a fork.
  2. Meanwhile, heat oil in a medium saucepan, add the chicken, and cook for 5 minutes until browned.
  3. Add Campbell’s Real Soup Base – Thai and bring to the boil. Add capsicum and snow peas and simmer for 2 minutes. Add noodles and simmer for 2 minutes.
  4. Ladle soup into bowls.
