Italian Speck Bacon & French Lentil soup

  • 1 tbs olive oil
  • Speck bacon 4cm x 2cm piece
  • 1 medium onion, diced
  • 1 leek, white park only, washed and sliced
  • 1L Campbell's Real Soup Base - Italian
  • 1 medium carrot, peeled and diced
  • 3 medium tomatoes, diced
  • 400g can lentils, drained
  • 2 tbs flat leaf parsley, chopped
  • Live oil and black pepper to garnish


  1. Heat olive oil in a medium size saucepan/pot. Add speck and cook until golden. Add onion and leek cook for 2 mins. Add soup base and bring to the boil.
  2. Add carrot and tomatoes then simmer for 15 mins. Add drained lentils and parsley, cook for a further 2 mins.
  3. Ladle soup into bowls and serve with a drizzle of olive oil and a good crack of black pepper
