Asian Pumpkin and Basil Soup

Method

  • Bring the stock to the boil in a large saucepan.  Add the pork or chicken, pumpkin and chilli and poach for 10 minutes or until meat is cooked through.
  • Remove the pork or chicken from the stock and slice into thick strips.
  • Add vinegar, sugar and soup to the stock mixture and simmer for a further 2 minutes or until hot. Return pork and chicken back to the soup.
  • Add basil leaves and serve immediately in individual soup bowls.



 

Ingredients

500ml Campbell"s Real Stock - Chicken
200g chicken breast or pork fillet
150g pumpkin, peeled and cut into 1cm cubes
1 red chilli, sliced
1 tbsp vinegar
2 tsp sugar
1 x 420g can Campbell"s Condensed Vegetable Soup
2 tbsp fresh basil, roughly torn
