Chicken Napolitana

Method

  • Heat oil in a large frying pan over high heat. Add chicken and cook for 5 minutes until browned.
  • Add capsicum, onion, carrot and garlic and cook for a further 5 minutes. 
  • Add soup, tomatoes and olives. Bring to the boil, stirring constantly. Reduce heat, cover and cook for 10 minutes, stirring occasionally. Serve with pasta or rice.

TIP: For a little kick add some finely chopped red chilli in step 2.

1 tbsp oil
500g chicken thigh fillet,  thinly sliced
1 red capsicum, sliced
1 onion, sliced
1 carrot, thinly sliced 
2 cloves garlic, crushed
1 x 420g can Campbell's Minestrone Condensed soup
1 x 400g can crushed tomatoes
1/4 cup pitted olives, optional
1 tbsp chopped flat leaf parsley
