Meat Loaf

Serves: 4 people

  • 1 tbs oil
  • 2 cloves garlic, crushed
  • 750g beef mince
  • 2 cups bread crumbs
  • 2 tbs chopped semi dried tomatoes
  • 1 egg
  • ¼ cup fresh chopped flat- leaf parsley
  • 500ml (2 cups) Campbell’s Real Stock - Beef, No Added Salt


  • 8 semi dried tomatoes
  • 1 cup tomato sauce
  • 4 tbs brown sugar


  1. Preheat oven to 180°C.
  2. Grease and line 2, 19cm x 9cm base measurement loaf pans.
  3. For the glaze place all ingredients into a food processor and blend until tomatoes are chopped. Set aside.
  4. Heat oil in a medium sized frypan over medium heat. Add onion and garlic and cook for 3 minutes or until onions are soft.
  5. Place cooked onion and garlic, mince, bread crumbs, semi dried tomatoes, egg, parsley, salt and pepper and Campbell’s Real Stock into a large bowl. Mix well until combined. Spoon into pans.
  6. Using a pastry brush, brush the top of the meatloaf’s with a generous amount of glaze. Bake for 30 minutes, brush again with glaze and bake for a further 30 minutes.
