Mexican chicken & vegetable wraps

Ingredients

  • 1 tbs oil
  • 1 onion, diced
  • 500g chicken mince
  • 2 tsp Mexican chilli powder
  • 1 x 420g can Campbell’s Chicken & Vegetable Condensed Soup
  • 8 tortillas
  • 1 baby cos lettuce, shredded
  • 2 tomatoes, diced
  • 1 cup grated tasty cheese
  • 1 x 125 gm can corn kernels, drained
  • 1/3 cup sour cream

Method

  1. Heat oil in large fry pan over high heat. Add onion & chicken, cook for 8-10 mins until browned.
  2. Add the chilli powder & Campbell’s Soup. Cook for 5 mins, stirring occasionally, until chicken is cooked through & mixture has thickened slightly.
  3. Warm tortillas.
  4. To serve place some lettuce down the centre of the warmed tortillas. Top with chicken mix, tomatoes, cheese, corn & sour cream. Fold tortillas to enclose filling & serve.
