REAL SOUP BASE RECIPE
- 1 tbs olive oil
- 1 onion, diced
- 1 L Campbell’s Real Soup Base – Moroccan
- 500g packet frozen peas
- 250g packet 90 second microwave long grain brown rice
- pan-fried haloumi and mint leaves to garnish
- Heat oil in a medium saucepan. Add onion and cook for 2 minutes. Add Campbell’s Real Soup Base – Moroccan and bring to the boil. Add peas and simmer for 5 minutes.
- Using a stick blender or blender, puree soup until smooth.
- Return pan to heat and add rice. Simmer for 2 minutes, stirring until combined.
- Ladle soup into bowls. Top with haloumi and mint.
Tip! You could also use 2 cups leftover cooked rice.
