Moroccan pea and brown rice soup

Ingredients

  • 1 tbs olive oil
  • 1 onion, diced
  • 1 L Campbell’s Real Soup Base – Moroccan
  • 500g packet frozen peas
  • 250g packet 90 second microwave long grain brown rice
  • pan-fried haloumi and mint leaves to garnish

Method

  1. Heat oil in a medium saucepan. Add onion and cook for 2 minutes. Add Campbell’s Real Soup Base – Moroccan and bring to the boil. Add peas and simmer for 5 minutes.
  2. Using a stick blender or blender, puree soup until smooth.
  3. Return pan to heat and add rice. Simmer for 2 minutes, stirring until combined.
  4. Ladle soup into bowls. Top with haloumi and mint.

 

Tip! You could also use 2 cups leftover cooked rice.
