Chicken & Tortellini Soup

Method

  • Place stock in a large saucepan and bring to the boil.
  • Add tortellini and continue to stir until stock returns to the boil. Reduce heat, and simmer, uncovered, for 5 mins.
  • Add chicken and carrot. Simmer for a further 2 mins, stirring occasionally, or until chicken is cooked through. 
  • Stir in baby spinach and spring onions and cook for 1 min or until spinach has wilted. Ladle into four indivdual bowls and serve with fresh crusty bread.

    *For variation any filled pasta can be used in this recipe.

Ingredients

1 Litre Campbell's Real Stock- Chicken or Chicken Consomme
200g fresh spinach & ricotta tortellini*
1 skinless chicken breast fillet, trimmed, very thinly sliced
1 carrot, cut into small batons
2 spring onions, thinly sliced
1 cup baby spinach leaves

Handy Hint

Moist & Savoury Stuffing

Use Campbell's Real Stock instead of water when preparing your favourite stuffing mixture. Substitute and even amount of Campbell's Real Stock for water.
