Creamy Chicken, Mushroom & Asparagus Fettucine

Method

  • Cook pasta or noodles as directed on packet.
  • Meanwhile heat oil in a large frying pan pr wok over high heat. Add chicken and cook until well browned.  Remove from pan. 
  • Reduce heat to medium.  Add onion, garlic and mushrooms and cook, stirring, for 5 minutes or until softened.
  • Add soup, asparagus and sour cream. Mix well and bring to the boil, stirring.  Return chicken to the pan and cook for 1 to 2 minutes until heated through. 
  • Place cooked pasta onto serving plate then top with chicken and sauce. Garnish with chives or parsley, if desired.

Ingredients

250g dried fettucine or egg noodles
1 tbsp oil
500g chicken breast, thinly sliced
1 onion, sliced
1 clove garlic, crushed
300g button mushrooms, halved
1 bunch asparagus, cut into 3cm lengths
1 x 420g can Campbell's Cream of Mushroom Condensed Soup
1/2 cup light sour cream
chopped chives or parsley, to garnish

Handy Hint

Moist & Savoury Stuffing

Use Campbell's Real Stock instead of water when preparing your favourite stuffing mixture. Substitute and even amount of Campbell's Real Stock for water.
