Creamy Green Chicken Curry

Method

  • Heat oil in a large frying pan or work over a medium heat, add chicken to the pan and brown well, stir in the curry paste and cook for 2 minutes.
  • Add soup,  coconut milk, and vegetables to the pan.  Simmer for 15 minutes stirring occasionally, or unti vegetables are tender and chicken is cooked. Stir in basil leaves and serve with steamed rice.

Ingredients

1 tbsp oil
500g chicken breast, diced
2 tbsp green curry paste
1 x 420g can Campbell"s Condensed Cream of Asparagus Soup
1 x 270 ml can coconut milk
100g whole green beans, topped and tailed
1 small zucchini, sliced
1/4 cup basil leaves
