Creamy Mushroom Gnocchi

Method

  • Heat oil in a large saucepan. Add mushrooms and cook for 5 minutes until tender.
  • Add the Campbell's Real Stock and cream and bring to the boil.
  • Add gnocchi and cook for 4- 6 minutes, stirring regularly, until gnocchi are tender. Stir through the cheese and serve in individual bowls topped with basil pesto, if desired.

Tip: For variation add some crushed garlic and freshly chopped thyme in with the mushrooms. You could also make this with pumpkin gnocchi.

Ingredients

1 tbsp oil
200g button or swiss brown mushrooms, sliced 
1 x 375ml pack Campbell's Real Stock-Vegetable
300ml cream
2 x 500g packets fresh or shelf stable potato gnocchi
1/4 cup grated Parmesan cheese
1 tbsp basil pesto (optional)
