Crispy Salt & Pepper Chicken with Mustard Sauce

Method

  • Combine flour with salt and pepper.
  • Cut chicken into 2cm wide strips then dry thoroughly with kitchen paper.  Toss chicken in the well seasoned flour, until well coated.
  • Heat oil in a frying pan and cook chicken for 4 - 5 minutes or until crisp.  Remove from the pan, drain and keep warm.
  • Remove any excess oil from the pan. Add soup, mustard, sugar, wine and parsley.  Bring to the boil then serve with the chicken and some steamed vegetables.
     

Ingredients

2 tbsp flour
" tsp salt
" tsp freshly ground black pepper
500g skinless chicken breast fillets
1/4 cup oil
1 x 420g can Campbell's Cream of Asparagus Soup
2 tsp Dijon mustard
1 tbsp brown sugar
1/4 cup white wine, stock or water
1 tablespoon finely chopped flat leaf parsley
