Real minestrone soup

Ingredients

  • 1 1/2 tbs olive oil
  • 250g bacon, diced
  • 1 onion, diced 2cm x 2cm
  • 1 carrot, diced 2cm x 2cm
  • 2 celery sticks, diced 2cm x 2cm
  • 1L Campbell’s Real Stock – Beef
  • 400g can diced tomatoes
  • 2 tbs tomato paste
  • 1 cup small shell pasta (dry)
  • 1/2 cup frozen peas
  • 1 zucchini, diced
  • 1 cup water
  • 400g can cannellini beans, rinsed
  • Grated parmesan (to serve)

Method

  1. Heat olive oil in large saucepan. Cook bacon, onion, carrot & celery for 3 minutes until bacon is brown & vegetables have softened.
  2. Add Campbell’s Real Stock, canned tomato & tomato paste. Bring to the boil.
  3. Reduce heat & simmer, covered for 25 minutes or until vegetables are tender. Stir occasionally.
  4. Add pasta, peas & zucchini and 1 cup water. Boil uncovered for 8 – 10 minutes.
  5. Stir through beans.6. Serve topped with grated parmesan.
