Risoni salad

Serves: 4 people
Prep time:



  • 400g risoni pasta
  • 1L (4 cups) Campbell’s Real Stock - Vegetable
  • 2 tbs olive oil
  • 1 garlic clove, crushed
  • 2 tbs lemon juice
  • 200g cherry tomatoes, halved
  • 1 cup rocket
  • 2 tbs finely chopped basil leaves


  1. Pour Campbell’s Real Stock into a medium sized saucepan and bring to the boil, add risoni and cook for 10 minutes or until all of the stock is absorbed.
  2. Add olive oil, garlic, lemon juice, tomatoes, basil and rocket. Stir well to combine.
  3. Serve warm or chilled with your favourite BBQ meats.
