Tasty chicken fried rice

Ingredients

  • 1 litre Campbell's Real Stock Chicken
  • 2 cups long grain rice
  • 1 tbsp oil
  • 250g chicken thigh fillets, diced
  • 3 rashers bacon, diced
  • 2 eggs, lightly beaten
  • 1 1/2 cups frozen peas and corn
  • 2 tbsp soy sauce
  • 2 spring onions, sliced

Method

  1. Place stock in a saucepan & bring to the boil. Add rice, cook, covered for 12 mins. Remove from heat & stand, covered for a further 5 mins.
  2. Heat oil in a large non-stick wok or frying pan. Add chicken & bacon. Cook for 3-4 mins or until golden. Push to the side then add eggs, stir & scramble eggs, cook for 1-2 mins.
  3. Add rice, peas, corn & soy sauce. Mix well. Cook for 2-3 mins, stirring constantly or until heated through. Serve sprinkled with spring onions.
